Making a ice cream from tea may seem a bit adventurous, but it's just the next logical step in our love affair with tea. We enjoy it hot, we're crazy about it iced, so how could it miss when turned into refreshing frozen finish to summer meals. Steep tea bags in hot milk to create a desert with the delicate flavors of fruits- flower tea blends, such as peach-jasmine or mango-passion fruit.

serve this ice cream to end a dinner from the grill, work, or skillet. Pick a favorite fruit flavored tea and enjoy a chilly treat tailored to your taste.

TEA ICE CREAM
Taste the tea milk mixture after steeping. If the flavor is not strong enough, add another tea bag and steep 3 minutes more.

Preparation; 20 minutes, Chill: 2 hours, Freeze: 20 minutes plus 4 hours

Ingredients:
1 12-oz. can evaporated milk
1/2 cup of sugar
3 fruit flavored tea bags
1/2 pint whipping cream
1/2 tsp. vanilla

Preparation:
1. In a medium saucepan cook and stir evaporated milk and sugar over medium heat until sugar is dissolved. Continue heating mixture just until it comes to a simmer. Removed from heat. Add teabags. Lets stand to 3 to 5 minutes. Remove tea bags, squeezing liquid from bags.

2. Cover and refrigerate for 2 hours or until well chilled. Stir ice cream and vanilla.

3. Freeze in a 1 quart ice cream freezer about 20 minutes or for time recommended by manufacturer's directions.

4. Transfer from ice cream freezer to chilled bowl, cover tightly and allow to firm up in the freezer for at least 4 hours. To serve, scoop into bowls, top with candied ginger. Makes about 1-quart.

And there you have it.
